Yeah, editing polls resets them unfortunately
They ought to include a warning for poll edits. (I think it does it to prevent bait and switch poll trolls.)

I knew that editing the poll responses reset the numbers, but I could have sworn I had edited the text in a post without resetting the poll. Or did it reset and I just missed it?

Yeah... that's true! Good point!
Maybe they've changed it so any edit resets, instead of just the responses? Some people were worried that changing the question could be exploited by trolls too.

Not sure. I just tested and got the results I expected: editing text (including adding/removing hashtag) didn't cause a reset, editing a response did. In the comments a couple of people shared github issues, and this one seems relevant - https://github.com/mastodon/mastodon/issues/24997
@fromjason are you using an app? It could potentially be a situation where the way the app implements poll updates makes it seem to the server that the responses have been edited.
