I don't think there's a straightforward answer to that.

I mean, except for counting new profiles of people with the hashtag, but I imagine there are likely to be plenty of folks who convert but don't tag themselves.

You'd have to figure out a metric to determine which data points are a result of the movement and which are a result of normal platform growth.

It seems like a simple idea at the surface, but once you look into the nitty gritty of defining what a valid data point is, it gets more difficult.

Probably the best way to approximate it is to compare the number of new users with previous days. The two (very imperfect!) sources I use for statistics are https://fediverse.observer/dailystats (which also lets you get daily statistics for each software platform) and https://fedidb.org/ But, the data is messy.
